Easy, Quick, & Delicious: Try This Camping Recipe for Taco Soup!

One of my family’s favorite camping recipes that we enjoy year round is for Taco Soup! Sure, it’s a soup. Sure, soup shouldn’t be eaten in summertime. But this is really like tacos in a bowl, and it’s the perfect summer-to-fall transition recipe! (And then, as we said, year round. Fall to winter, winter to spring, spring to summer, you get the idea.) This camping recipe is also terrific because you can totally change up the entire flavor just by adding a different meat. It’s up to you!

Camping Recipe

Taco Soup

Ingredients

  • Choose your meat: 2 pounds ground beef or cooked, shredded chicken breast or pulled pork or smoked beef sausage/kielbasa – you get the idea!
  • 1-2 envelopes taco seasoning (use one packet for mild flavor, or up to two for stronger flavor)
  • 1 envelope Ranch dressing seasoning mix
  • 1 ½ cups water
  • 2 cans black beans, rinsed and drained
  • 2 cans cream corn
  • 2 cans pinto beans, rinsed and drained
  • 1 can (14 ½ oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • Additional toppings for serving: sour cream, shredded cheddar cheese, corn chips


Meat prep:

  • If you’re using ground beef, brown it in a skillet over medium-high heat. Crumble as you go, and then drain/discard the fat.
  • If you’re using chicken, cook it through and shred with a fork once cooled (you can also use canned chunk chicken breast).
  • If you’re using smoked pulled pork, set it aside and resist the urge to eat it all before you get started.
  • If you’re using smoked beef sausage or kielbasa, simply slice it up.

Next:

  • Place cooked meat into slow cooker and add all other ingredients.
  • Heat on low for 4-6 hours until warmed through. Serve with the toppings of your choice.

Extra tips:

This recipe is easily adjusted to suit your tastes. Want more zip? Give it an extra 4 oz can of diced green chilies. Want more taco-y flavor? Go with 2 full packets of seasoning. Don’t love black beans but love pinto or red beans? Switch it up!

One thing you’ll especially love about this camping recipe is that it can be thrown together in the time it takes for your kids to argue about who clears the breakfast dishes (and that’s only if you’re browning the ground beef or shredding chicken). Finish breakfast, throw your Taco Soup together in the slow cooker, and head out for a day of fun. Plus, it’ll make your new or used RV smell crazy good by the time you come back later!
