Trail Mix Cookies
Ingredients:
- ½ cup applesauce
- ½ cup white sugar
- ½ cup brown sugar
- 1 ½ teaspoons vanilla extract
- 2 egg whites
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ teaspoon ground cinnamon
- 1 ¼ cups quick cooking oats
- ½ cup white chocolate chips
- ½ cup chopped pecans
- ⅓ cup dried cranberries
Note: The chocolate, nuts, and fruit can all be swapped out for your favorite versions. Try these different combinations:
- Dark chocolate chips, chopped walnuts, and coarsely chopped dried apricots
- Semi-sweet chocolate chips, pecans, and golden raisins
Directions:
- Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
- Beat together the applesauce, sugars, and vanilla and set aside.
- Beat the egg whites until frothy – a hand mixer running on high speed will get the job done!
- Combine the egg white froth to the applesauce mixture, stirring gently.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Add this to the wet ingredient, stirring gently until just combined.
- Add the remaining four ingredients, mixing until well combined.
- Chill for 20 minutes to an hour, then drop by large tablespoons onto cookie sheets.
- Bake 9-10 minutes or until golden brown. Cool on wire racks.
