Ingredients:
- 1 lb stew beef, cubed
- 2 tbsp olive oil
- 1 onion, diced

- 1 cup pearl barley
- 8 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper, to taste
Directions:
Start by heating the olive oil in a large pot over medium-high heat. Add the stew beef, cooking until each side is browned. Once the beef has a good sear, set it aside on a plate. Don’t skip this step! It really locks in the flavor and tenderness in every bite.
